The fat contained in 100% grass fed cows consists of some vital fatty

acids... Omega 3 and CLA. The CLA content will be 500% more

plentiful in milk produced by a all grass fed cow compared to a cow

that is fed even a small amount of grain. CLA isomer 9-11 (the

isomer found in milk) is being linked to and credited for its

ability to fight and prevent cancer cell growth. The industry is

just learning what these fatty acids do and how they are vital to our

well being. Our bodies can not make manufacture the fatty acids.

CLA is only produced in ruminant animals and is only available in any

significant quantity in 100% grass fed ruminates.

Your comment , 'empty calories in our fat we consume today' ,is right

on the money. We are what we eat..or we are what our

cow,pig,chicken...eats. We need to know how our food is cared for

and fed to understand our foods nutrient value. All the more reason

to 'know your farmer', buy direct from your local farmer, 'get

intimate with your food'. When it comes to nutritious fat it is not

organic that is important it is free range, 100% grass fed, grown

naturally without induced growth though grains and hormone

implants. Even fish today are no longer a guaranteed quality source

of meat/fat. Many fish are raised on fish farms and pushed for quick

growth with grain. The grain changes the fatty acid ratio to

increase the level of Omega 6 to Omega 3.

The increase in milk volume per cow over the years has inversely

effected the quality and quantity of the fat in milk. The cows that

produce the highest fat today are typically the animals that produce

the smallest volume. Typical fat % are: Jersey 4.2%, Guernsey 3.9%,

Ayrshire 3.9%, Shorthorn 3.9%, Brown Swiss 3.9%, Holstein 3.2%.

Variables include; feed, stage of lactation, genetics. Water

Buffalo (commonly milked in India) have a typical fat content of 7.0%.

To address Lance's concern, I have gone back and capitalized as

required..but don't ask this poor dairy farmer and questionable

typist to go back and punctuate as required...I have a tough enough

time just finding the shift button on the key board...spell check is

a wonderful tool!!!! my wife has coined me 'the preposition

king'..and deservedly so!!!!
