It's totally fine to wait... just leave your SCOBY floating in the oiquid KT you've saved as starter for the next batch, right on your counter (don't refrigerate). If you're going to wait for more than a week, you'll need extra liquid KT because evaporation will remove some of the liquid, and the SCOBY seems to use a bit to stay hydrated.
