She would start a huge pan of water boiling and " " blanch " " the veggies. She would put the tomatoes in a sling and dip them in the boiling water so that she could " slip " off the skins, then she would put the deskinned tomoatoes in a grinding seive thingy to get all of the seeds out. Then put the pulp into another big pot and COOK THEM DOWN, meaning she would simmer them for days until all the water evaporated and she had this very thick paste. She would can the paste. Which was another long process until the lids popped. But when she wanted tomoato soup, she would take the tomatoe paste and stir in milk and either flour or corn starch, salt, pepper, etc and make like a tomatoe gravy.
