Homemade versus GTS's

Greetings.

I have been making my own KT now for about 1 month. I restarted after a few

years awol.

I started my brew from a bottle of GT's Enlightened Original.

I had a bottle of the store bought left, so I thought I would now compare mine

to the store bought, Mine versus GTS

The store bought GTS is nice, balanced and tangy with the zippy flavor.

Mine is very good however it does not have that zippy tangy taste, I am not

talking about fizz as mine when it is done being made is bubbly and does produce

a nice head of foam. Although when it sits in the bottle for a few days looses a

lot of the fizz.

I am wondering if they carbonate their brew, or what else they may be doing. I

would assume since theirs is a major operation they have some tricks of the

trade? Maybe?

Also, since mine came fro their cultures in the bottle it should be similar, Yes

? No?
