Guest guest
I just saw a video about making a scoby hotel. The only thing she puts into the jar are the scoby and enough kt to cover it. She then puts a lid on the jar. I thought I was making my first hotel this weekend--I used my fermenting jar and put in the scoby, some finished kt, and half a gallon of freshly made tea. In other words, I did exactly what I'd have done to start a new batch of kt. I thought this way I'd always have plenty of very acidic starter to use each time I start a new batch. Did I do it wrong, or is either way okay? Here's the video, if anyone is interested--it's only about a minute and a half long.
