I feel like I did when I threw out the crib and discovered the family bed. SOOO much easier! No more spills, sticky bottles, loss of carbonation, disturbing the scoby (as often). So, I am firguring for 2.5 gallon crock, using 12 tea bags and three cups of sugar. Sound right? I read the doc on CB here and the author mentions stirring the KT before bottling. I was always concerned that stirring would decrease the carbonation that you end up with in the bottle. However, I gave it a little stir and even then, noticed that the last bottles had less bubbles than the first few. Why is that? Also, it was a tad more sour after the usual 7 days, like the author said. Why does it ferment faster in the crock? Anyhow, I am going to keep my eye out for more of these!
