Should I be concerned? Christa, not at all! The scobys can settle where they wish; they have the freedom of the jar. If you manage not to disturb your fermentation jar, the bacteria in your brew will build another new zooglia mat (scoby) across the top of your brew. That's the way it works. It's absolutely fine. The microculture of bacteria and yeasts are distributed through ALL the liquid, including the scobys themselves and they are all busy transforming your sweet tea into lovely KT - the sugar into healthy acidic compounds. Everything is fine on the Kombucha front!
