re creaminess for soups

My husband just made our noon-time green smoothie and it was really good, so I thought I'd share —For about 3 cups soup/smoothie:Coconut oil (1-2 tsp)Romaine - several leavesSpinach - handful+Celery - 3-4 stalksOne pickled garlic cloveLemon juice (1/2 lemon - I would use membranes and all except zest & seeds, but he just juices it)one small tomatoPinch Himalayan sea saltWater (he used room temp water. You can always blend longer for warmer)Blend coconut oil with water until oil is well dispersed and no chunks/globs of oil remain.Add remaining ingredients and blend well for 2 minutes. If desired, blend until hot.** This is our usual mix, but today was the first time we used coconut oil and it really did add a nice

creaminess, and with no discernable flavor. Feel free to substitute greens of your choice, and use a regular garlic clove if you don't have pickled. The fresh garlic does give a more harsh garlic kick.Enjoy!Peggy
