Also, would the alcohol in kefir cause a possible relapse in a recovering alcoholic? in Kentucky -------------------------------------- No way. Not my kefir. At that percentage, it would hardly be suitable for children. There is no more alcohol in properly made milk kefir than in fruit juice. Water kefir is a different story. You can cause alcohol by virtue of the sugar. I don't want alcohol so I do not seal my jar. I care nothing for fizz. I do an aerobic fermentation, same with milk kefir, same with kombucha. Kombucha does not have alcohol unless...you are harvesting prematurely or have an overbalance of yeast. Mine doesn't have any alcohol.
