Alcohol

Milk kefir, I understand, is at least 1% alcohol. What about water kefir,

kombucha, etc.? Also, would the alcohol in kefir cause a possible relapse

in a recovering alcoholic? in Kentucky

No way. Not my kefir. At that percentage, it would hardly be suitable for

children. There is no more alcohol in properly made milk kefir than in fruit

juice.

Water kefir is a different story. You can cause alcohol by virtue of the sugar.

I don't want alcohol so I do not seal my jar. I care nothing for fizz. I do an

aerobic fermentation, same with milk kefir, same with kombucha.

Kombucha does not have alcohol unless...you are harvesting prematurely or have

an overbalance of yeast. Mine doesn't have any alcohol.
