Broccoli stems skinned and sliced1 garlic clove, minced or pressed2 and 1/2 tablespoons of fresh lemon juiceSea salt and black pepper, to tasteCombine onions, vegetable broth or water, potatoes, and broccoli in a large pot and cook until vegetables are tender. Puree mixture in a blender or a food processor until creamy. Return to pot. Add lemon juice, garlic, sea salt, and pepper. Enjoy this nutritious and filling soup.
