I love kale but find eating it raw hard to chew, but have soaked in olive oil and lemon juice however easier is steamed. Chet Day...I remember him way back when he was also a Health Minister with Hallelujah Acres and their Diet. He even worked for Malkamus way back. Over the years, no judgment here, he has totally gone away from this Diet. Maybe he is back on it again, but don't know. He is super researched and has tons of great information. Sometimes we have to take what we need or want, but his website is loaded with something for all: www.chetday.com Here's my version of Steamed Kale--carolg Wash/cut kale In steamer, steam kale for about 5 or less minutes. When finished top with olive oil, and your favorite seasons. Enjoy. When cooled you can also add to a fresh salad. Yum. carolg carolgSuzanne <suziesgoats@...> wrote: Eat Kale for HealthBy Chet DayIt's a sorry fact of life, but most people don't even knowwhat kale is.It blows my mind, but just about every time I buy a bag ofthis mineral and vitamin-rich dark green leafy vegetable, the check-out person at the register asks, "What is thisstuff?""It's kale," I explain, "and it's really good for you."Most of the folks at the register respond to that commentwith the same look they reserve for customers with dirtyfingernails who are picking their nose.Seriously, kale is one of the best vegetables you can eatas preventative

medicine. Did you know that kale contains more carotenoids(anticancer agents) than any other green vegetable?Well, it does. You will want to eat kale both raw and cooked. Some of thecarotenoids are destroyed during heating, but cooking alsomakes more carotene available for bodily use.Even a paltry half cup of kale a day will give you cancer-blocking benefits.I like my kale in salads and in super green smoothies.Others like their kale cooked. Here are two healthy kalerecipes, courtesy of ...Cut one bunch of kale into bite-sized pieces. Saute 1/2tablespoon (or as much as you like) of minced garlic in abit of oil (I use peanut or olive). Add kale and stir fryuntil it turns bright green. Add one or two tablespoons ofwater and some powdered veggie broth. I like Vegeta brand. If you can't find Vegeta, make a small amount (1/4 cup) ofveggie broth and pour over kale. Mix well.

Cover the potand steam until kale is done to your taste. And the second cooked kale recipe...Saute one onion and one half to one tablespoon of garlic.Add a small can of diced tomatoes with their juice. AddCajun seasoning like Zatarain's to taste. Add one bunch ofdiced kale and cook until done to taste. This is reallygood served over rice. The longer you cook the onion, thesweeter it will become and the better the tomato sauce is.Personally, I like to have plenty of raw kale in my dietbecause the calcium content is so high, but I prefer it injuice rather than having to eat it.So try juicing a big handful with celery, apple, zucchini, and a carrot. Fantastic!Did I mention that kale is cheap? I didn't, did I?Well, it is.At our local supermarket, I regularly buy a basketball-sized portion of this wonderful vegetable for 92 cents orless.Kale may not be the tastiest

veggie on earth, but it's oneof the healthiest, so give it a try.

It's also great in a green smoothie. I have a Magic Bullet and use it for them all the time. It turns my lovely fruit a pretty gross shade of green, but you can't taste it when you drink it.<G>

Pop it into your blender with other favorite veggies (leafy greens) or

the so-called veggies that are actually fruits. Cuts down on the chewing

and you can enjoy it more. However, don't forget to chew each mouthful

anyway to properly mix it with saliva. Only make enough so you can use

it all though, otherwise the nutrients begin to oxidize and you lose 'em.

Thanks Don and Sharyn for smoothie/juicing ideas re kale in blender. I always think of the juicing of veggies in juicer but not in the blender. Gotta start changing my thinking too. carolg"Sharyn E. Many years ago when salad bars were first introduced, folks would look at me

crazy because I would help myself to the kale that decorated the salad bar.

Sweet and crunchy!

I don't like eating kale, raw or cooked. I love green veggies but kale is an exception. The texture is too tough for my liking. However, I juice it with carrots or in Green Lemonade with romaine, a lemon and an apple.

I put kale

in my smoothie every day! I also

always use blueberries, so imagine the color of that! Purple/brown/green. But it’s sooooo good, and you’re right Sharyn, you can’t

taste it when it’s all smooshed up with fruits.

Juicers are nice but remove the pulp. Why go to all the trouble to juice

something and then add the pulp back in when you can just blend it.

Granted, a juicer does remove much more of the juice and is much better

at breaking down those cellulose cell walls. But hey, the body needs a

certain amount of indigestible fiber too.

"The texture is too tough for my liking."

What type of kale are you eating? I like the black or Jacinto kale. It doesn't have the curly edges and is very much like a lettuce. I find it is not tough at all.

I prefer collard greens myself. Although I

will buy kale or mustard greens occasionally and cook them singly or mixed with

other greens.
