Guest guest Posted July 12, 2001 Report Share Posted July 12, 2001 HEREIN LIES THE MOTHER OF ALL BEAN SOUPS!!!!!!! you can use bacon bits instead of real bacon for a healthier soup and you can switch pasta for rice, but this will stay better and not get soggy like the pasta can and this freezes WONDERFULLY!!!!!!!! It is also extremely economical. I sell this in my catering business and folks go bonkers for it! 15 Bean Soup dry mix (do not use the spices pkg in it) Prep time 1/2 hour Cooking time, 2 hours Cost $15 per large pot big enough to feed a small army Ingredients: 15 bean soup dried mix (or any other one lb dry beans of your choice) one large onion diced one stalk celery, diced 1 lb. Fresh carrots, diced one can corn one pkg fresh spinach (or one pkg frozen chopped spinach) 5 medium potatoes, diced 1 lb. Bacon, diced salt, pepper to taste, 1 tablespoon cumin, 1 table spoon parsley 4 garlic cloves, minced 2 cups dry white rice one gallon chicken stock Empty beans in large bowl and cover with water, and another two inches of water to soak beans overnight, or about 8 hours Drain beans from container and rinse beans in strainer once again Place beans in large pot and cover with chicken stock Add celery, onions, potatoes and carrots and spices and simmer for two hours, stirring frequently In frying pan, cook diced bacon until crispy Add entire frying pan contents, bacon AND fat to bean mixture After 1-1/2 hours of simmering, add two cups of dry rice and stir frequently, still simmering After mixture is finished cooking, remove from burner, while still hot, add the spinach and can of corn EAT!!!!!!!!! Serve as is or with croutons on top and parmesano cheese on top, it is an entire meal! Beano?? Has any member of the MGB Airborne Squadron tried Beano? Does it help with our particular malady?
