It takes cooking well, I fry onions in it and add it to the chicken soup. You can use it like coconut oil. The rice is browned in oil first and then water add to cook, some vegs and spices added along with cooked chicken added just before serving. Frying french fries etc. It stains clothing very badly so be careful. Also, I've had gastric bypass three years ago. Oils and sugars are a big no no. VCO gives me no problems, I can eat it by the tablespoon full and do. However there is enough of a different chemical structure to Palm Oil to cause me difficulty with my stomach. It's not traditional wet milling, but I watch as they grate and exctract it from the copra. Does anyone know the process for extracting the red palm oil and a link to pictures of the tree so I can identify the tree if it is here.
